Newbie Question On Neck Building

i'm sure this is a newb question but, how straight (or i guess "flat" is a better term) should a piece of wood for a neck be before gluing on the fretboard? I have two pieces of wood i was thinking of using to build a neck (one mahogany and one maple). Both of them are pretty flat when you put a straight edge to it - but not perfectly so (both have a very slight bit of bow in them)

- will the truss rod take care of that?

Your neck should be perfectly level before putting on a fretboard. A truss rod is used to counteract the pull of strings, but I wouldn't count on it to correct a piece of wood.
